Chef James Chien

THE ASIAN CAJUN

Born in Kowloon, Hong Kong, James was the son of a culinary student. His mother had such a love for cooking that she attended a local culinary school to expand her cooking skills as a hobby. Early on, Chef James was influenced by two people, his mother of course and then, television personality, Graham Kerr, The Galloping Gourmet.  

After graduating from the Fashion Institute of Technology, with a Menswear Design and Merchandising Degree. James worked in Fashion Industry for almost 8 years from fashion illustrations to design and production.  His first job was with a textile company on Sixth Avenue, follow by Outerwear design with two companies, womenswear, and ending with overseas travel in production. In 1988 he moved to Atlanta to begin his Culinary Career.  

It's been a very long extensive Culinary Road traveled, from New Orleans cuisine, fine dining, 5 Star hotels, Country Clubs, City Clubs, Catering Companies, and two previously owned and operated restaurants, Some Like it Hot and Alligator Blues Cafe. He has also appeared on several episodes of a local sports and fishing show called: The Nuts and Bolts of Fishing doing a cooking demo on various fishes.  Appearances on CNN and Atlanta's own Noon Day Live.  The last two titles held were Executive Chef for two Major Branded Hotels in the Metro Atlanta area.  Now, back to what Chef James loves most, cooking for people first hand.  And the vehicle is Eating Americana.  "Everything familiar but better!"  Great American Comfort Foods.  "Unapologetically American."
